{"id":15615,"date":"2026-06-29T12:51:32","date_gmt":"2026-06-29T10:51:32","guid":{"rendered":"https:\/\/domaine-la-parpaille.com\/?post_type=news&#038;p=15615"},"modified":"2026-06-29T12:53:19","modified_gmt":"2026-06-29T10:53:19","slug":"recipe-for-roasted-eggplant-tart-with-apricots-fresh-goat-cheese-and-a-quinoa-base","status":"publish","type":"news","link":"https:\/\/domaine-la-parpaille.com\/en\/news\/recipe-for-roasted-eggplant-tart-with-apricots-fresh-goat-cheese-and-a-quinoa-base\/","title":{"rendered":"Recipe ~ Roasted eggplant, apricot and fresh goat cheese tart \u2013 quinoa base \ud83c\udf1e"},"content":{"rendered":"<p class=\"p1\"><strong><span class=\"s1\">Ingredients<\/span><\/strong><\/p>\n<p class=\"p2\"><b>For the dough<\/b><\/p>\n<p class=\"p2\">225g of cooked and drained quinoa<\/p>\n<p class=\"p2\">1 egg<\/p>\n<p class=\"p2\">120g pecorino<\/p>\n<p class=\"p2\">Salt, pepper, herbs<\/p>\n<p class=\"p2\">Rice flour (2 tbsp)<\/p>\n<p class=\"p2\"><b>For garnish<\/b><\/p>\n<p class=\"p2\">Hummus (recipe in Note Bene)<\/p>\n<p class=\"p2\">4 eggplants<\/p>\n<p class=\"p2\">8 apricots<\/p>\n<p class=\"p2\">300g fresh goat cheese<\/p>\n<p class=\"p2\">Rocket<\/p>\n<p class=\"p2\">Olive oil<\/p>\n<p class=\"p2\">Honey vinaigrette (olive oil \u2013 honey \u2013 soy sauce and orange juice)<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Preparation<\/span><\/strong><\/p>\n<p class=\"p2\">Preheat the oven to 180\u00b0C (Gas Mark 6)<\/p>\n<p class=\"p2\">To prepare the dough: blend the quinoa, then add the other ingredients except the flour.<\/p>\n<p class=\"p2\">Add the flour to form a ball of dough.<\/p>\n<p class=\"p2\">Roll it out and line the tart tins.<\/p>\n<p class=\"p2\">Bake for 35 minutes \u2013 remove from oven<\/p>\n<p class=\"p2\">Cut the eggplants into thin slices \u2013 place them in a large ovenproof dish<\/p>\n<p class=\"p2\">Sprinkle with olive oil, coarse salt, pepper and rosemary.<\/p>\n<p class=\"p2\">Bake in the oven for 20 minutes \u2013 check for doneness \u2013 the eggplants should be tender.<\/p>\n<p class=\"p2\">Book now<\/p>\n<p class=\"p2\">Slice the apricots thinly \u2013 Set aside<\/p>\n<p class=\"p2\">Crumble the fresh goat cheese<\/p>\n<p class=\"p2\">Assemble the tarts<\/p>\n<p class=\"p2\">Spread hummus on the bottom of the pie.<\/p>\n<p class=\"p2\">Arrange slices of eggplant and apricot strips \u2013 scatter the crumbled cheese over them.<\/p>\n<p class=\"p2\">Add some rocket as decoration \u2013 Pour a little honey vinaigrette over it and sprinkle with coarse salt.<\/p>\n<p class=\"p2\">Enjoy<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Nota bene<\/strong><\/p>\n<p class=\"p1\"><strong><span class=\"s1\">Ingredients<\/span><\/strong><\/p>\n<p class=\"p2\">1 small can of chickpeas<\/p>\n<p class=\"p2\">4 to 5 tablespoons of lemon juice<\/p>\n<p class=\"p2\">4 mint leaves<\/p>\n<p class=\"p2\">3 sprigs of coriander<\/p>\n<p class=\"p2\">2 tablespoons of sesame paste<\/p>\n<p class=\"p2\">1 clove of garlic<\/p>\n<p class=\"p2\">4 tablespoons of olive oil<\/p>\n<p class=\"p2\">Salt pepper<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Preparation<\/span><\/strong><\/p>\n<p class=\"p2\">Drain and rinse the chickpeas<\/p>\n<p class=\"p2\">Peel and crush the garlic<\/p>\n<p class=\"p2\">Place the chickpeas in the blender bowl \u2013 blend once<\/p>\n<p class=\"p2\">Add the garlic, lemon juice, herbs, tahini and olive oil \u2013 season with salt and pepper<\/p>\n<p class=\"p2\">Blend until a smooth paste is obtained.<\/p>","protected":false},"excerpt":{"rendered":"<p>Une recette saine et gourmande qui sent bon l&rsquo;\u00e9t\u00e9 !
