Recipe ~ The madeleines of our childhood 🫶

Who says March, says Grandmother's Day and Shrove Tuesday... So we made oreillettes and madeleines! And today we share with you the recipe for Proust's sweet treats!

Eve's madeleines

 

Ingredients

250g flour

150g sugar

200g salted butter

1 packet of yeast

4 eggs

Orange zest

 

Preparation

Melt the butter – let it cool.

Beat together the eggs and sugar.

Add the zest –

Mix the flour and yeast. Add to the egg – sugar – flavoring mixture

Beat well and add the cooled melted butter.

Refrigerate the dough – at least 1 hour – even better overnight.

Preheat the oven to 180°C.

Butter and fill the madeleine molds 2/3 full.

Cook for about ten minutes – take the madeleines out when they are golden brown.

 

Note: the dough can be kept for several days in the fridge.

  • Vanilla & rum
  • Tonka bean with half chestnut flour
  • Replace 100g butter with 50g olive oil + lemon zest
  • Gourmet madeleines
    • Before baking, insert a square of chocolate in the center of the dough or a teaspoon of your favorite jam.
