  • 250 gspelt flour
  • 125 gfresh butter
  • 100 gsugar
  • 75 gground almonds
  • Vanilla
  • A bit of milk

For garnish

  • 4 to 5 tablespoonsapricot jam
  • Apricots and nectarines
  • A little brown sugar for gratin

Preparation

  1. Start by preparing the dough: mix all the ingredients together – add +/- milk to obtain a nice ball of dough.
  2. Preheat the Th6 oven
  3. Leave to cool for 15 minutes then roll out the dough, leaving the edges high so that you can fold them over the fruit afterwards.

  5. Place coarse pieces of fruit on top and fold the dough over the fruit.
  6. Sprinkle with brown sugar and bake for 35 to 40 minutes.
  7. While cooking, gently crush the fruit so that it releases juice.
  8. Remove from the oven and let cool.
  9. Enjoy warm with a nice quenelle of crĂšme fraĂźche or vanilla or lavender ice cream.

Home tips

  • For more flavor, instead of ready-made almond powder, take whole almonds, roast them and grind them coarsely.
  • For a subtle taste, grate tonka bean over the fruit before baking.
  • You can replace the apricots and nectarines with a mix of plums (greengages, mirabelles, and quetsches). In this case, choose plum jam or chestnut cream. And instead of almond flour, use hazelnut flour.
