Recipe ~ The little soissons hummus sandwich

Perfect for picnics this summer!

Ingredients

  • For the Hummus

1 jar of soissons (540g – without water)

3 good tablespoons of white almond puree

Olive oil

2 cloves garlic

Coarse salt & pepper

Soya sauce

2 handfuls of toasted hazelnuts

Thyme

Zest and juice of one orange

Pink berries

Chipotte pepper

  • For the sandwich

Asparagus

Zucchini

Fresh spinach

Feta cheese

Candied lemons

Thyme

Good burger or sandwich buns.

 

Recipes

Prepare the hummus – mix all the ingredients together.

Marinate the feta. Cut it into cubes as well as the candied lemon. Mix everything with thyme, salt & pepper.

Boil the vegetables (asparagus & zucchini) until they are just crunchy. Then brown them in olive oil, salt & pepper. Separately, put the spinach in a pan with a little olive oil, salt and pepper. You can add a touch of soy sauce for a little caramelized touch.

Assemble the sandwiches. Spread the hummus on the base of the bread after cutting it in half. arrange the grilled vegetables and wilted spinach. Add the marinated feta and some fresh spinach leaves. Close the bread and enjoy!
